This petite winter squash is as sweet as honey and weighs just 3/4 to 1 1/2 pounds, the perfect size for one or two servings. Though you can find Delicata type squash in the grocery store, the extra-sweet, nutty, orange-fleshed Honeyboat is a gourmet delight that is hard to find. The squash grow on a 6 foot vine. After harvest, they will store well for several months, allowing you to have home grown winter squash well into winter. Winter squash is rich in calcium, potassium, vitamin C, vitamin A, and folate.
